Generally, all Dunlending men and women are Craftsmen like smiths, masons, falconers, hunters etc while also being sworn as a 'Laoch' or warrior to a 'Fian' or noble.
The Fians are akin to war captains" You say, "I am not going to bother explaining our relationship with the outside world as we don't really have one except to speak about the forgoil, ionroiri, horse-folk or Rohirrim.
Travelers might be able to tell that once there was a thoroughfare but travel would be difficult.

Concerning elves the only thing the dunlendings know for sure is that they are friends of the Rohirrim, which is enough to hate them.
Fielded by Clan Bear, one of the largest clans, their origins date back to the battle of helms deep, when the dunlendings were fighting for Saruman side aside with the Uruk-Hai.
Although, as with the Third Age, they could possibley be converted to the side of evil, as with Saruman in the raids on Rohan.

Appendix D of The Tale of Galadriel and Celeborn in Unfinished Tales tells of the history between the Numenoreans and the forbears of the Dunlendings.
The Dunlendings are "a sullen folk, akin to the ancient inhabitants of the White Mountains whom Isildur cursed."
According to Unfinished Tales, the folk of Bree were descended from Dunlendings who had become subjects of the northern Numenorean Kingdom of Arnor.

Some Tolkien illustrators have shown the Dunlendings as slightly Celtic in dress; given the Germanic appearance of the Rohirrim, this would have worked quite well on a visual level, with a certain historical resonance.
Their modern day descendents have, in the late 80's and 90's, come out of the closet as it were.
The film-makers have clearly streamlined Saruman's armies - no Dunlendings at Helm's Deep, no half-orcs at all - and there are probably good reasons for this, both financial and artistic.
