 Arthurian Booklist
This is set in the closing days of King Arthur's reign and mostly concerns the Lady of the Lake at that time (Argante, from Layamon; her predecessor is Nimue), with some recounting of her childhood.
The first listed, the "short" or "non-cyclic prose Lancelot," is a very interesting point in the development of the legend: Lancelot is not yet involved in the Grail quest (indeed, it is implied that it has already occurred by the time he comes to King Arthur's court).
This is a retelling of the Arthurian tales.

 EDSITEment - Lesson Plan
The students should choose from among this list of characters: King Arthur, Sir Lancelot, Sir Gawain, Sir Perceval, Morgan Le Fay, Queen Guinevere, Merlin, Mordred, Sir Bors, Sir Galahad, Sir Pellinor, the Fisher King, Sir Bevidere, and the Lady of the Lake.
Arthur and his court of chivalrous knights are alive and well in the 21st century—gracing the stage in productions of Lerner and Loewe's musical Camelot, appearing on the wide screen in films like Excalibur, First Knight, and Merlin, and waiting to be rediscovered by new generations of readers in books about their fabulous adventures.
He later discovers that the Fisher King is his uncle and that had he only asked about the function of the graal, the old king would have been healed and the wasteland surrounding his castle would have been transformed into a green and fertile countryside.

One of the books that I really liked was the Dragon and the Unicorn though it's more about Merlin than the whole Arthur legend.
I love the Arthur legend itself, but tend to stay away from retellings, especially if their main claim to fame is that it's the same story, but told from a particular character's point of view (very often Guinevere, by the way).

Amazon.com: King Arthur: Hero and Legend: Books: Richard Barber
This book, perhaps the best one-volume survey of the entire Arthurian field (especially of German, French, and English works) for the nonspecialist, provides a good overview of the legend's development as it was told and retold, embellished by other stories.
Barber traces the development of Arthur, one of the greatest of all heros, from his actual life, about which we know little, through his remolding into legend by various generations to reflect their culture, to his continuing modern appeal.
I really like this one, because he looks past the valiant legend and searches out Arthur the man. Arthur - as far back as Longshanks - has been molded and used to their purposes - so it's hard to peel back all the layers and get back to original Arthur.

Among these (all books that Greg Weisman has read) are T. White's The Once and Future King, Mary Stewart's Merlin trilogy, John Steinbeck's The Acts of King Arthur and his Noble Knights, and Thomas Berger's Arthur Rex.
Arthur was almost entirely forgotten in the 18th century, which preferred to draw its inspiration from the classical world and considered the medieval period merely a long dark age between the glories of Greece and Rome and the modern age.
Arthur's story continued to flourish in the 16th century under the Tudors (who were Welsh and liked to think of themselves as Arthur's heirs), although very little lasting literature about him was produced (the closest being Edmund Spenser's Faerie Queene, and Arthur himself plays only a minor role in it).
